Vegan Beech Mushroom Avocado Sushi




This vegan recipe for Vegan Beech Mushroom Avocado Sushi has white rice, avocado and beech mushroom as the primary ingredients.

Ingredients

2 sheet Nori
2 cups White Rice
1 cup Beech Mushroom
1 cup Avocado
1 cup Cilantro
1-2 tbsps Sesame Seeds
1-2 tbsps Soy Sauce
3-6 tsps Sesame Oil

Directions

  1. Make sure you have at least 2 cups of cooked, warmed up rice for two rolls. Season the rice by adding a teaspoon of salt and a couple teaspoons of sesame oil (Gimbap seasoned rice).
  2. Wash mushrooms and roughly chop. Dice the cilantro.
  3. Heat pan over medium heat, add sesame oil.
  4. When oil is hot, add mushrooms, stir fry for 2-3 minutes.
  5. Add a tablespoon of soy sauce to pan, stir fry for another 2 minutes. Turn off heat.
  6. Cut avocado into slivers.
  7. Place a sheet of nori, rough side up and longer side vertically (not left to right), on a wooden cutting board or a bamboo mat. Spread 1 cup of rice evenly over the nori. Use your fingers and make sure the edges have an even distribution of rice.
  8. Put avocado, mushrooms and cilantro on top of the rice in a horizontal line (left to right), close to you. Make sure all ingredients are evenly distributed in that line.
  9. Lift the bottom edge of the nori (closest to you) with both hands and roll the filling away from you. Every two inches of progress, give the entire length of the rolled ingredients an gentle even squeeze. Try to keep even pressure on the length as you roll.
  10. At the end of rolling, give the entire length of the roll a gentle even squeeze. Roll the roll 90 degrees and squeeze again. Roll the roll another 90 degrees and squeeze again.
  11. Cut with a sharp knife coated in sesame oil to avoid sticking. Serve with soy sauce.
